Canning supplies questions

What supplies do I need to start canning?

For water bath canning you need a water bath canner with a rack, canning jars, new lids and bands, a jar lifter, a canning funnel, a lid lifter and a tested recipe book. For pressure canning, replace the water bath canner with a pressure canner.

What is the difference between water bath and pressure canning?

Water bath canning is for high-acid foods such as fruit, jams, jellies, pickles and acidified tomatoes. Low-acid foods such as vegetables, beans, meat and broth must be pressure canned to reach the higher temperature needed to make them safe.

Can I reuse canning lids?

Standard flat metal canning lids are single-use for canning. Bands can be reused if they are not rusted or bent. Tattler lids with rubber rings are made to be reused.

What canning supplies are best for beginners?

A beginner canning kit is the easiest start. It includes the jar lifter, funnel, lid lifter and other tools in one box. Add jars, lids and the Ball Blue Book for tested recipes.
